Turkey meatballs with tzatziki

Here is a really quick, easy and tasty recipe that I found on www.healthyfood.co.uk

Meatball ingredients:

500g lean turkey mince

1/2 aubergine, cut into 1cm cubes

1 egg white

400g tomato passata or 1 tin of chopped tomatoes

zest of 1/2 lemon

1 tbsp chopped fresh mint

2 garlic cloves, crushed

1 tbsp dried mixed herbs

olive oil for cooking

Meatball method:

1. Add olive oil to a frying pan and over medium high heat cook the aubergine cubes for about 5 minutes. Set aside to cool.

2. In a bowl, combine the turkey mince, egg white, lemon zest, mint, dried mixed herbs and cooked aubergine and combine/mix well with your hands and make into 20 walnut-size balls.

3. Add more olive oil to a frying pan and over medium high heat, fry the meatballs until golden brown (approx 5-7 minutes).

4. Add the passata/chopped tomatoes and garlic to the frying pan with the meatballs and bring to a boil. Cover and simmer for 20 minutes.

5. Serve with the tzatziki.

Tzatziki ingredients:

200g natural yoghurt

1 garlic clove, crushed

1/2 medium cucumber, grated with excess liquid squeezed out

1 tbsp chopped fresh mint

Tzatziki method:

1. In a bowl combine the yoghurt, garlic and mint and mix well.

2. Fold in the cucumber and mix well.

3. Serve with the turkey meatballs.
