Ratatouille

This recipe is certainly a good way to getting you closer to your 5 a day!

Ratatouille ingredients:

1 onion (diced)

2-3 garlic cloves (diced)

1 large aubergine (diced)

3 small coloured peppers (each a different colour, de-seeded and sliced)

2 medium courgettes

450g tomatoes (skinned and quartered)

2 tbsp mixed herbs

30ml French dressing (optional)

olive oil

salt and pepper to taste

Ratatouille method:

1. Heat some oil in a pan on a medium to medium high heat and cooked the onion and garlic until the onions turn translucent (about 5 minutes).

2. Add the aubergine and cook for a further 5 minutes.

3. Add the courgettes and peppers and cook until soft (about 3-5 minutes ).

4. Add the tomatoes, mixed herbs and season with salt and pepper and cook until well combined (about another 5 minutes).

5. Add the French dressing, mixed and serve.

Hint: to peel the tomatoes, mark an X at the bottom of each tomato with a knife and put in a bowl and cover with boiling water. Leave for a few minutes and the skin should easily peel off.

  1. This looks really yummy and healthy too! Love that you are blogging healthy gluten free food, I am trying to do the same…but always get sidetracked by baking and unhealthy foods!! x

      Hi Sarah, ratatouille is such a quick and easy recipe to get in part of your 5 a day. I have a bit of a sweet tooth as well – most of the recipes posted so far are sweeties so I probably need to work on that! x
