Turkish red lentil soup

Soup ingredients:                    

1 cup of red lentils  (washed and drained)

1 medium potato (pe1 medium potato (peeled and diced)eled and diced)

1 medium onion (peeled and diced)

2 medium carrots (peeled and diced)

2 tbsp olive oil

1-2 tsp paprika

juice of 1-2 lemons (I like it lemony so usually put in 2)

salt and pepper to taste

 

Soup method:

1. Saute onions in pan until transulent about 2-3 minutes.

2. Add carrots , potatoes, lentils, stock and paprika to the pan and bring to boil and simmer for for about 40 minutes until the lentils become tender.

3. Add lemon juice, salt and pepper.

Note: If the consistency is too thick, simply add more boiling water. Dust with paprika when serving.
