Chilli con Carne

Chilli con Carne ingredients:

500g lean beef mince

1 large onion (finely chopped)

1 pepper (preferably red, chopped)

2-3 garlic cloves (crushed)

400g can chopped tomatoes

400g can red kidney beans

2 tbsp tomato puree

1 heaped tsp hot chilli powder

1 tsp paprika

1 tsp mixed herbs

1 beef stock cube

300 ml hot water

olive oil

salt and pepper to taste

Chilli con Carne method:

1. In a pan on medium heat add oil and cook the onions until soft and transparent (about 5 minutes).

2. Add the pepper, garlic, chilli powder and paprika. Mix well and cook for about 5 minutes.

3. Add the mince and cook until brown on a higher heat setting (about 5 minutes).

4. Add the stock cube to the hot water and mix well then the liquid to the pan and mix well. Then add the chopped tomatoes and mixed herbs, salt and pepper to taste and the tomato puree then mix again.

5. Bring to the boil and then simmer for about 20 minutes stirring occasionally.

6. Drain the beans in a sieve and rinse well. Add to the pan and bring the pan to the boil and then simmer for about another 10 minutes.

7. Season further with salt and pepper as needed. Let stand for 10-15 minutes before serving.

Best served with brown rice and sour cream and finely chopped parsley as a garnish.
