Banana bread

This is one of my favourite recipes to make as it is virtually effortless to make!

Banana bread ingredients:

125g butter

125g caster sugar

2 eggs

3 large ripe bananas – mashed

225g gluten-free flour

2 tsps baking powder

1 tsp mixed spice

pinch of salt

Banana bread method:

Preheat oven to 180°C and grease and line a loaf tin.

1. Cream the butter and sugar together.

2. Beat in the eggs one at a time.

3. Gently stir in the mashed banana.

4. Sift in the gluten-free flour, baking powder, mixed spice and salt and mix well.

5. Pour the mixture into the loaf tin and bake for 1-1.5 hours (depending on your oven) until a skewer comes out clean when inserted into the middle of the loaf then cool on a wire rack.
